If the cooled meat is to be stored for a short period of time, or to complete the maturity of the meat in a short period of time, the cooled meat should be transported to the refrigerating room through the track in time for hanging and refrigeration. The temperature of the refrigerated room is generally -1°C appropriate and kept constant. The temperature rise and fall should not exceed 0.5°C, and the temperature rise should not exceed 3°C when entering and leaving the product. Relatively stable at 85% to 90% is more appropriate.


The temperature and humidity conditions can be properly adjusted to help prolong the preservation period of the meat. That is, when the air temperature in the refrigerated room decreases, the relative humidity can be appropriately increased. Generally, the relative humidity can be increased by about 5% every time the temperature is lowered by 1°C. The air flow speed in the refrigerated room should be slow and uniform, and the natural circulation can be maintained, generally 0.05 ~ 0.1m/s.


The refrigeration period is determined according to the body temperature and refrigeration conditions, generally 15 to 20 days. The refrigerated storage of deboned meat is significantly shorter than that of white strip meat, only 5 to 7 days. This is because the processing process is polluted, the muscle surface area is increased, and the tissue is damaged, which is conducive to the growth and reproduction of microorganisms. After the chilled meat has been refrigerated for 5 days, the quality of the chilled meat should be checked every day, and the temperature should be dealt with in time.



Storage temperature and time for different meats:


The storage temperature of rabbit meat cold storage is -1 to 0, the relative humidity is 85, and the storage period is 3 to 5 days.


The storage temperature of mutton cold storage is -1 to 1, the relative humidity is 85 to 90, and the storage period is 1 to 2 weeks;


The storage temperature of the cold storage for internal organs is -1 to 0, and the relative humidity is 75 to 80. The storage period is 3 days;


The storage temperature of beef cold storage is -1.5~0, the relative humidity is 90, and the storage period is 4~5 weeks;


The storage temperature of veal in cold storage is -1 to 0, the relative humidity is 90, and the storage period is 1 to 3 weeks;


The storage temperature of pork cold storage is -1.5~0, the relative humidity is 85~90, and the storage period is 1~2 weeks;
